A Chef de rang is not a chef who cooks as the title may infer, but instead a senior member of the waiting staff.
“Rang” simply identifies a section of tables in a restaurant.
Often known as an assistant head waiter the chef de rang will have their own station (rang), and team of waiters, in a restaurant.
A top priority for the chef de rang is customer satisfaction.
Table side preparation of dishes such as Caesar salad may well be part of the Chef de Rang’s repertoire.
