It is used in Spain and Latin American countries, historically influenced by spanish colonisation such as Mexico and Puerto Rico.

This should not be confused with Italian soffritto however, which is identical to the French mirepoix, made up of onions, celery and carrots. The onions form half the mixture and carrots and celery the other two quarters, also cooked in olive oil or butter.
