Calamari (Squid)

Marinated fried squid rings in Panko breadcrumbs

  • Squid – Remove the skin and wings, pull out the head from the body,remove the glass like pieces from inside the body, chop the head off the top of the tentacles and remove the gristle from inside the top of the tentacles, keep the body and the tentacles and discard the rest
  • Buttermilk – Mix the rest of he ingredients in the buttermilk and whisk together
  • Marinade – Place the squid in the buttermilk mix and allow to soak for at least 1 hour before using

Fryer – Pre heat the fryer to 170°c


  1. Place the Panko breadcrumbs into one of the mixing bowls
  2. Lift one piece of squid at a time out of the buttermilk drip off any excess marinade and roll around in the breadcrumbs
  3. Dip it back in the buttermilk quickly and straight back into the breadcrumbs
  4. Roll around until the squid is covered in breadcrumbs outside and in
  5. Place on a tray with baking paper on whilst you repeat the process on the rest
  6. Carefully drop the squid rings into the fryer half submerging before letting go to reduce risk of splashing
  7. Do not over crowd the fryer or the squid rings will cook unevenly and go soggy
  8. Once the rings are floating and have gone golden brown (as per picture) Lift the fryer basket out of the fryer and allow to drip dry for a few seconds
  9. Transfer into a mixing bowl and lightly season with sea salt and toss
  10. Serve straight away
