Chicken Liver Pate with Red Onion Marmalade

Method
Preparation
- Ciabatta – slice off the very ends of the ciabatta, then slice the rest into 4 equal slices (approximately 20 gramme per slice)
- Pate – place your pate in the Kilner jar, push it down with the back of a table spoon and tidy it up by rimming the jar with a damp jay cloth (this can be done as part of your preparation and not in service)
- Onion marmalade – place the marmalade in the ramekin and rim with a damp jay cloth for presentation (this can be done as part of your preparation and not in service)
Method
- Place the rocket in the mixing bowl and dress with the olive oil
- Toast the ciabatta on both sides under the grill until slightly golden brown and crisp
- Place on the board as per picture or however desired
