Chocolate fudge brownies

Weighing scales
Food mixer and beater attachment
Baking tray – 38 cm x 38 cm x 5 cm deep
A bowl for the eggs
Baking parchment
Heat proof bowl

  • Butter – Weigh oout the butter and allow to soften
  • Weighing – Weigh out all of the ingredients except the ice cream
  • Eggs – Beat the eggs together in a bowl
  • Baking tray – Butter the baking tray and line with the baking parchment


  1. Chocolate
  2. Pour boiling water into the saucepan and place on sufficient heat to keep it simmering
  3. Put the chocolate in the heat proof bowl and place over the hot water ensuring the bowl does not touch the water
  4. Allow the chocolate to melt
  5. When fully liquid, remove from the heat set aside to cool


  1. Brownie batter – 
  2. Heat the oven to 180° (fan oven 160°)
  3. Place the sugar, butter and vanilla in the food mixer and beat until creamed together
  4. Add the eggs at the rate of about 1 egg at a time and continue beating on a medium speed
  5. When incorporated, turn off the beater and sift the flour, cocoa, malt and baking powder into the bowl. (Always sift it to remove lumps)
  6. Beat again on a slow speed until fully mixed and then pour in the melted chocolate and mix
  7. Remove the bowl from the mixer and pour in the white chocolate drops and fold in with the spatula until evenly distributed
  8. Pour the batter into the baking tray and smooth out


  1. Baking – 
  2. Place in the centre of the oven for 35 minutes. Take care not to over bake as you will lose the gooeyness of the brownie
  3. After 35 minutes, remove from the oven and allow to cool in the baking tray for 30 minutes, before removing
  4. Place on a chopping board and allow to cool for a further 20 minutes before portioning
  5. Cut into 16 serving portions
  6. When fully cool place in a airtight container and refrigerate


  1. Place a brownie on a serving plate and top with a ball of vanilla ice cream (60g)
