INGREDIENTS

ALLERGIES
ALLERGEN INFORMATION is attached to the ingredients, which automatically pulls through and displays in your recipes and can shared with both FOH & BOH to inform your customers.

YIELD
Our yield calculator built into ingredients is a valuable tool for accurately calculating dishes, for example, if you are buying whole striploins and trimming them down before cutting them into steaks you could potentially loose 10% of the striploin before you start portioning there fore increasing the value of the trimmed steak by 10%.

PRICING
All your own recipes will be built from your own supplier price lists so you can accurately and easily cost out dishes before they go live on your menus.

PORTION MULTIPLIER
Easily calculate and multiply batch recipes in seconds for ease of preparation and costing.

Beer Battered Cod and Chunky Chips

Method

PreparationFish & Chips

  • Batter – follow recipe
  • Fish – remove skin if required
  • Chips – follow recipe
  • Gremolata – follow recipe, place in the ramekin
  • Lemon – cut a wedge
  • Fryer – Pre heat the fryer to 170°c and remove the basket

Method

  1. Place the fish in the flour and roll around so every bit has flour on it
  2. Shake off any excess flour and place in the batter
  3. Move it around until completely covered
  4. Drip off any excess batter and gently place the fish into the fryer
  5. Don’t let go straight away or it may get stuck to the bottom so allow to seal first
  6. It will float almost instantly, once it has coloured on the bottom side gently turn it over and allow it to colour on the other side
  7. Drop your chips in the fryer basket and place in the fryer
  8. Heat up your mushy peas in a pan or in the microwave
  9. Once the chips are golden remove from the fryer and allow to drip dry
  10. Once you have a even golden colour all the way round remove from the fryer and drip dry before plating
  11. Plate as per picture
  12. Ready to serve
