INGREDIENTS

ALLERGEN INFORMATION is attached to the ingredients, which automatically pulls through and displays in your recipes and can shared with both FOH & BOH to inform your customers.

Our yield calculator built into ingredients is a valuable tool for accurately calculating dishes, for example, if you are buying whole striploins and trimming them down before cutting them into steaks you could potentially loose 10% of the striploin before you start portioning there fore increasing the value of the trimmed steak by 10%.

All your own recipes will be built from your own supplier price lists so you can accurately and easily cost out dishes before they go live on your menus.

Lemon and Oregano Potatoes

Small diced roasted potatoes flavoured with lemon and oregano

Roasting tray
Sauce pan
Measuring jug
Scales
Brown chopping board
Cooks knife
Potato peeler
Fine grater
colander
Lifter

Method

Preparation

  • Potato – Peel, Dice 2 cm square
  • Lemon – Zest on a fine grater
  • Oven – Pre  heat on 180 degrees centigrade

Method

  1. Place the diced potatoes into the sauce pan and top with tap water about 3 cm above the top of the potatoes
  2. Place over a medium flame and par boil until they are jut over half way cooked
  3. Remove from the water and allow to dry off in the colander
  4. Place your tray with the oil in, in the pre heated oven and allow to heat until extremely hot
  5. Remov the tray from the oven and add in the potatoes and toss in the oil with a lifter
  6. Add in the the oregano, lemon zest, salt and pepper and toss again until al is evenly distributed throughout the tray
  7. Place back in the oven and cook, toss every 5 minutes until there is a even crisp coating
  8. Take out of the oven remove the potatoes from the oil and allow to cool
  9. Place in a refrigerator safe container and store in the fridge, use as required

Service

  1. Place a portion on a oven flat with a knob of butter
  2. Place in a preheated oven 180-200°c for 5-10 minutes or until hot throughout
  3. Ready to serve
