INGREDIENTS

ALLERGEN INFORMATION is attached to the ingredients, which automatically pulls through and displays in your recipes and can shared with both FOH & BOH to inform your customers.

Our yield calculator built into ingredients is a valuable tool for accurately calculating dishes, for example, if you are buying whole striploins and trimming them down before cutting them into steaks you could potentially loose 10% of the striploin before you start portioning there fore increasing the value of the trimmed steak by 10%.

All your own recipes will be built from your own supplier price lists so you can accurately and easily cost out dishes before they go live on your menus.

Paella – Fish

Method

PreparationPaella

  • Onions – Skin and discard, half and dice 1 cm
  • Peppers – De-seed, discard and dice 1 cm
  • Chorizo – Skin and dice 1 cm
  • Baby plum tomatoes – half
  • ¬†Mussels – Clean, remove any beards, check they are still alive, give it a little tap
  • Stock – Heat up the water and mix with the stock cubes
  • Spring onion – ¬†Peel outside layer, discard and slice 1 mm
  • Lemon – Zest and juice

Method

  1. Heat up the sauce pan on a medium flame, add in the oil
  2. Add in the onion, garlic, chorizo and peppers and sweat out until soft
  3. Add in the paprika and rice and mix, add in the bay leaves, wine and stock
  4. Add in all the sea food, tomatoes and peas mix together turn the heat down to low and place the lid on
  5. Cook out without stirring for 15 – 20 minutes or until the rice is cooked, check every few minutes
  6. Remove the lid and mix it slightly, add in the spring onion, lemon juice, zest and parsley
  7. Ready to serve

Tips

  • If you need to make this dish quicker you can use cooked rice and half the amount of stock, this can shave 15 minutes off the cooking time
