INGREDIENTS

Our yield calculator built into ingredients is a valuable tool for accurately calculating dishes, for example, if you are buying whole striploins and trimming them down before cutting them into steaks you could potentially loose 10% of the striploin before you start portioning there fore increasing the value of the trimmed steak by 10%.

All your own recipes will be built from your own supplier price lists so you can accurately and easily cost out dishes before they go live on your menus.

Salmon in a Bag (serving)

Salmon enclosed in baking paper with citrus, wine and herbs served with buttery dill new potatoes and crisp green beans.

Method

PreparationSalmon in a bag with Buttered New Potatoes and Fine Beans

  • New potatoes (pre cooked)-┬áSlice the new potatoes in half lengthways
  • Dill – Finely chop 1 mm
  • Butter – Dice 1 cm
  • Fine beans – Top and tail
  • Blanching – Heat a pan of water just below boiling for the blanching baskets

Method

  1. Place the Salmon on a small oven tray with the long fold facing up and place in a pre heated oven 180 – 200 degrees centigrade for 12- 15 minutes.
  2. Once the salmon has been in the oven for about 7 minutes place the new potatoes in a blanching basket a place in the simmering water.
  3. once the salmon has been in the oven for ten minutes place the fine beans in the other blanching basket and cook for 3 minutes also in the simmering water, until the fine beans are slightly softened but still have a crisp bite and are still vibrant green.
  4. Remove the new potatoes from the blanching pan, drain off and place in a mixing bowl with 15 grammes of butter, season lightly with salt and pepper and add the dill, toss and place on plate.
  5. Remove the fine beans from the water, drain and place in a mixing bowl with 10 grammes of butter toss and place on the plate.
  6. Remove the salmon from the oven ensuring it is hot (If the parcel is expanded full of steam it is ready), place it on the plate, leave the parcel closed to be opened at the table.
  7. Be sure to warn the customer the steam will be hot when they open up the parcel.
