A vinaigrette is an acidic dressing made from oil, vinegar, herbs and other ingredients such as mustard.
Vinaigrettes are commonly used to dress salads or with cold meats.
Emulsified vinaigrettes use eggs and/ or mustards as a stabiliser.
Vinegar does not always have to be used. Citrus juices and wine can be used and still be classed as a vinaigrette.
