Caesar salad with Gran Padano and Anchovies

PreparationCaesar salad

  • Romaine lettuce – remove the stalk and wash the leaves, dry the leaves in the colander .
  • Gran Padano – Finely grate

Method – base salad

  1. Using a squeezy bottle run a line of dressing arond the sides of the mixing bowl.
  2. Add in the lettuce, croutons and half the cheese.
  3. Using the shape of the bowl toss the leaves without using your hands.
  4. Pour into the salad bowl and place leaves where required for presentation.
  5. Place the anchovies on top so they are all visible and finish with the rest of the cheese
  6. Serve straight away.

With Chicken or  Salmon

  1. Char grill the Chicken breast/Salmon Fillet on both sides until the you have defined char marks on the chicken/ salmon on both sides and the it is sealed all the way round.
  2. Place in the oven 180 degrees centigrade and cook until fully cooked through all the way to the middle (10 minutes).
  3. Chicken – slice in to 5 even slices and serve on top of the salad.
  4. Salmon – place on top of the salad and serve.
